In a saucepan, put the 6 tablespoons of sugar and a liter of milk. Leave it on the fire until it starts to boil, then stir to completely dissolve the sugar. Add the essences, and the vanilla sugar sachet. In the rain, add the semolina and stir continuously. When it has started to thicken, add the coconut flakes, the fresh orange juice, the 2 teaspoons of cinnamon and continue to mix. Leave it on the fire for another 15 minutes and, in short portions, mix gently. The fire must be small, in order to bind the composition well and keep its aroma.

For decoration, put the semolina hot in a bowl, then leave to cool. After it has cooled, turn it over on a plate and sprinkle with coconut flakes and orange peel or decorate as you like.

Good appetite!

Biscuit salami with oranges and chocolate

Biscuit salami is one of the desserts that reminds me of my childhood and has remained among my favorite sweets, although I don't make it very often.

The recipe is one without baking, easy to make and cheap. Of course, over time, biscuit salami has come to have other ingredients than the classic recipe. I already have a baby friendly peanut butter biscuit salami on the blog. This time, I gave the recipe a Christmas twist and included chocolate flakes and orange flavor in the biscuit salami, and I replaced the sugar with dates. You can adapt the recipe according to your preferences. For example, you can replace milk with water or vegetable milk instead of cocoa and locust bean powder, you can only use locust bean powder, and you can omit chocolate.

  • 250g single biscuits (popular)
  • 60g dark chocolate flakes
  • 200 ml of milk
  • 100g dates (14-15 large pieces)
  • 80g butter
  • 1lg raw cocoa powder (10g)
  • 1lg carob powder (10g)
  • 1 sachet (6g) orange essence (in powder form)
  • 1 sachet (8g) rum flavored sugar (optional)
  • coconut flakes (optional)

Method of preparation:

I shredded the biscuits. I had exactly those popular, hard, dry and phase biscuits (bought by my husband). Over them I added dark chocolate flakes. If you don't have flakes or drops, you can grind a piece of chocolate.

I warmed the milk a little and poured it over the dates, in the blender jar. I used soft dates (I buy them from Lidl), so if your dates are drier, I advise you to moisturize them about 1-2 hours before, directly in milk or water, as you prefer.

I mixed the milk and dates. I transferred the mixture back to the pot over low heat. I added the butter and let it melt slowly.

You can replace the milk in the composition with water. With milk, the final product is more perishable.

After the butter melted, I added a sachet of rum-flavored sugar and one sachet of orange peel powder. I bought the rum-flavored sugar in this idea, while I will make a biscuit salami. Inevitably, the aroma reminds me of the biscuit salami of my childhood. It is an ingredient that you can omit. I told you about the orange peel powder. It is commercially available. It can also be found in the organic version, in specialized stores or in the specific districts of hypermarkets. You can replace it with fresh orange peel, but I advise you to opt for oranges with untreated peel.

In a cup I put raw cocoa powder and carob powder. I mixed them with a few tablespoons of the pot until I got a paste. I do not add cocoa or carob powder directly to the pot, because it often happens to make small lumps.

I added the obtained paste over the mixture in the pot.

I poured the liquid mixture from the pot over the chopped biscuits and mixed well. I waited about 10 minutes for the liquid mixture to soften the biscuits.

I divided the composition into 2 approximately equal parts and transferred it to food foils (doubled & # 8211 I superimposed 2 foils). I sprinkled coconut flakes on them, but this is an optional ingredient. You choose whether to use it or not. Basically, I chose to make 2 biscuit salamis.

I rolled the composition and squeezed one of the ends. I tried to give the biscuit salami a uniform shape and I tightened the other end.

I gave the biscuit salami cold. Ideally, he should stay there overnight. If your time (or craving) presses on, put them in the freezer for an hour or two and then transfer them to the refrigerator.

Coconut Milk

Boil water (500 ml), weigh coconut. Place in a glass bowl. Before the water starts to boil, remove from the heat and pour over the coconut. Leave it to stand for about 10-15 minutes, then strain it through gauze into another bowl. Gather the gauze and squeeze well (squeeze like laundry when squeezing them by hand) to remove excess water from the nut. A milky white liquid will result in the vessel.

Before you start straining the walnuts, put 750 ml of water on the fire again, this time. Coconut, squeeze, put it back in the first bowl. When the second round of water is about to start boiling, take it off the heat and place it over the coconut. Let it sit for 10-15 minutes (I left it for 15 minutes each time).

Do the same. strained and squeezed. The liquids obtained are mixed together and a liter of coconut milk is obtained, which has a special aroma.

Gray with milk

Every home has its own recipe for semolina with milk and we all grew up with this sweet. It is a childhood dessert, which we all have and then we enjoy it again when we have children. We gladly put a bowl and serve it with the little ones.
Gray with milk is a simple recipe that even a beginner can make. What's your favorite topping? I lean toward the cherry jam.

It is also worth trying the Mexican pudding recipe with rice.

Gray with Coconut Milk and Prunes

The coconut milk I have is the result of the mixture of coconut cream that I find commercially (all coconut milk is written on the box, but it has the consistency of cream) with plain water (200 - 250 gr coconut cream + 800 ml water ).

500 ml coconut milk (made as I told you above)
125 gr dehydrated plums

I boiled the milk together with the plums which I cut into small pieces. I stirred until it boiled for the first time, after which I added semolina in the rain, stirring constantly. I kept it on the fire (stirring all the time) until it thickened. I poured it into cups, but I saw that thanks to the coconut milk it's fatter, and it slips easily from the cups, so I went back to the plates for the look. Very simple and very sweet.

There is no need for sugar due to plums, I no longer consume white or brown sugar or whatever it is. If you want something sweeter, a little honey works.
It is ideal for breakfast or for dessert.

Cake with semolina

This semolina cake recipe is inspired by the popular Turkish semolina cake recipe & ndash Revani but also by the Egyptian Basbousa recipe. It's made in the vegan version & ndash of fasting! Try it too!

The semolina cake is a popular recipe in the Middle East and it has a whole history behind it. Semolina cake is made especially in Egypt, Jordan, Turkey but also other Eastern Mediterranean regions. Each region gave a different name to this cake, but the differences in preparation are minimal, the basic recipe being about the same.

I decided to try this semolina cake recipe because in my research of popular recipes from the Middle East I discovered Revani and Basbousa, two delicious semolina cakes with small differences between them. I took a little from each and I veganized the recipe. Moreover, I did not use white sugar as a sweetener, but agave and coconut sugar.

Did you know that the Turkish cake with semolina is called & bdquoRevani & rdquo and has been present in the cuisine of this country since Ottoman times? The name & bdquoRevani & rdquo is derived from the name of the city of Yerevan (in today's Armenia), which was once conquered by the Ottomans. To celebrate the victory, this semolina cake was invented and eaten very often at that time. Since then, this dessert has become an important part of Turkish cuisine.

As I told you above, this semolina cake can be found under various names depending on the region in which it is made. For example, it is also called Past & # 363sha, a recipe originally from Kuwait. Past & # 363sha differs from the other variations of the semolina cake in that it has pistachio on top and orange flower water in the composition.

This is a very simple dessert that does not require a complex preparation. The cake is in a single layer of fluffy semolina, soaked in a lot of syrup. Yogurt and butter are ingredients of the original recipe, but I made without, in the fasting version and it turned out very good!

Before serving, you can decorate the cake with coconut flakes or nuts. This recipe can be prepared at home very quickly and without too much effort and you can even try to experiment with various flavors.
